Location

Our culinary journey will take us from Tangier, along the picturesque coast to Larache and Rabat, through lush vineyards and the scenic Middle Atlas Mountains, before culminating in the majestic imperial city of Fez. Each stop offers a unique blend of regional flavors and traditions, creating an unforgettable gastronomic adventure.

Cuisine

Northern Morocco offers a rich variety of flavours, with each city bringing its own culinary traditions. In Tangier, Mediterranean influences shine through fresh seafood like grilled sardines and pastilla, a savory-sweet pastry. Fez, known for its deep, complex dishes, is famous for tagines and rfissa, a chicken and lentil stew, with spices like ras el hanout adding aromatic depth. In Chefchaouen, the mountain town’s rustic cuisine features hearty stews, mechoui (slow-cooked lamb), and fresh goat cheese, all made with locally sourced herbs and vegetables. We will eat our way through these wonderful diverse food culture of the North and learn family recipes while creating our own dishes.

“Our trip was wonderful. Thank you so much for arranging it. I wanted to call particular attention to two people is Fes who couldn’t have been better – Meryam and Bilal (spelling). They are wonderful ambassadors for their country and very hospitable. Our driver Omar was also very good. I think our favorite things were the Roman picnic in the perfect setting after touring the Roman ruins, the privilege of making food with the family in Fes and the women’s coop where we made bread. The latter might not appeal to everyone as it was quite rural and simple but those people went out of their way to take care of us,  help us learn and a very authentic experience. A very gracious country! Our favorite hotels were the one night we spect in Erfourd and the Medina de la Jardins in Marrakesh. Thanks again for this lovely experience.
